Domaine Geantet-Pansiot, Bourgogne Pino Fin 2022
The Pinot Fin vines grow on clayey limestone soils on the edge of Gevrey-Chambertin. The grapes come from a 3.5-hectare plot of vines up to 50 years old. The harvest is carried out manually in small boxes and the yield is 30-40 hectolitres per hectare. The grapes are sorted by hand on the shaking table and completely destemmed without damaging the berries. This is followed by temperature-controlled pre-maceration for up to 8 days. Alcoholic fermentation is spontaneous (25°C-30°C). Ageing takes place without racking for 14 months in barriques, 30% of which are new. Finally, the wine is bottled unfined and unfiltered.
